Our turkey's are brined in a special solution of salt, brown sugar, and other spices so they maintain their juiciness during the smoking process. They are hand seasoned with our own special mix of herbs and spices then slow smoked over a mix of hardwood to give it that sweet smoke flavor. We offer either Whole, spatchcocked (spatchcocking helps with even cooking and keeps the white meat from drying out before the dark meat is done). Each turkey weighs between 14 to 16 lbs before smoking giving you a 11 to 13 pound finished bird.
If a whole turkey is too much, you can also select just the turkey breast which is given the same treatment as the whole turkey and smoked to be tender and juicy. Our turkey breasts come on the bone and weigh between 4 to 5 pounds each pre cooked weight.
